phylsfrills: Spaghetti Sauce Recipe
Well, here goes, my secret Spaghetti Sauce recipe that was handed down from my mom. The nice thing I like about this sauce is you can change it to suit your own taste. I change it occasionally, especially in summer when my zucchinis are ready for picking from the garden. I will grate some into the sauce for added bulk. Also, I will grate in a large carrot and if I really want a chunky sauce, I will dice into 1/2 inch pieces red and green peppers and toss them in as well. Spaghetti Sauce
1 lb. lean ground hamburger 1 large can tomatoes (28oz)
1/2 tsp salt and pepper 1 small can tomato paste (5 1/2oz)
1 tsp brown sugar 1 or 2 cloves fresh garlic, minced
1/2 tsp dried oregano 3 whole chilli peppers
1 medium sized onion, diced 1 whole bay leaf
Combine all ingredients except hamburger and onion in 3 quart heavy saucepan with lid. While sauce is simmering, brown hamburger in heavy skillet. Once cooked, add meat to sauce. In remaining fat, add onion and saute to brown. Drain well and add to sauce and continue cooking on low heat for 4 to 5 hours.
If you are adding vegetables (except zucchini or carrot) to the mix I would add them during the last hour or so of cooking. The longer you cook the sauce the spicier it gets. You can control the heat by cutting down or adding more chilli peppers. These should be removed from the sauce prior to serving. Also, if you have fresh oregano, add 1/4 cup finely chopped, instead of dried. Try adding fresh basil as well for a different taste.
You can also add mushrooms to the sauce. I saute fresh sliced mushrooms and add them just before serving. Canned sliced mushrooms or stems and pieces can be substituted. These can be added when you add your vegetables.
Serve over fresh cooked pasta and sprinkle with parmessan cheese.
If you want you can also substitute the canned tomatoes for tomato sauce, just make sure to use the same amount.
Just as an aside, my daughter and son in law are coming for ten days holidays and we are going camping so I will probably be making a batch of this sauce to take along. I am excited that they are going to be here in two days!!!

my recipe is similar... except I use white sugar instead of brown. does it give a different sweetness? (that sounds stupid, but I'm curious)
instead of just oregano I add a mix italian spice (dry or fresh) and a sprinkle of that Mrs. Dash seasoning.
for veggies, I like onion, green and sometimes red & yellow peppers, zucchini in season and yellow squash.
If I have all the veggies in season, I will omit the hamburger meat and substitue sauteed chicken and allow the sauce to become very thick or very chunky and toss with some spaghetti or fettucine pasta and chicken and sprinkle heavily with fresh grated paremesan or asiago cheese. We call it Drake's spaghetti, as its his favorite.
